My friend and systems guru June shared this fudge with all of us at JHANE BARNES at the holidays. It is a recipe handed down from her great-grandmother.
I promise, one bite and you feel warm and loved all over!
Ingredients:
- 8 cups 100% cane sugar (Jack Frost sugar works best. Don't try to use Domino sugar. The fudge won't set properly)
- 1/3 cup Hershey's unsweetened cocoa
- 4 cups 1% milk
- 1 stick butter or margarine
- 1 tsp. vanilla
- 1 cup peanut butter
Directions:
- Combine cocoa and sugar in a heavy saucepan. Add milk and bring to a bubbly boil on high heat, stirring constantly.
- Reduce to medium heat and continue to boil, stirring only occasionally, until mixture thickens.
Note: this is *not* a quick fudge, it may need to boil for more than an hour.
- Remove from heat when you can form a soft ball with a small amount of mixture dropped into cold water.
- Add butter, peanut butter, and vanilla. Let cool for 3-4 minutes, then beat until mixture thickens and loses the gloss.
- Spread into 9x13 pan (glass pan works best). Let cool slightly before cutting.
