Asian Spinach Salad

Ingredients:
Soy Dressing

  • 8 tbsp Olive Oil
  • 3 tbsp Sugar
  • 3 tbsp Rice Vinegar
  • 3 tbsp Soy Sauce
Whisk 6 tablespoons of the oil with sugar, vinegar, soy sauce. Salt and pepper to taste. Set aside.

Salad

  • 1 bag fresh spinach
  • 1-3 ounce pkg Japanese Ramen noodles
  • 1 handfull slivered almonds
  • 2 tbsp sesame seeds
  • 2 tbsp chopped green onion
  • chopped garlic
Heat 2 tablespoons of oil, add garlic and saute for a minute. Add noodles and saute for a few more minutes. Add almonds and sesame seeds; stir until golden (8-10 minutes total).

Pour garlic mixture into a large bowl and let cool for at least 10 minutes.

While the mixture is cooling, rinse and dry the spinach, then add cleaned spinach and onions to the garlic mixture. Pour soy dressing over the salad to taste. For a healthier salad, omit the Ramen noodles.
